Cloud Bread recipe I used.....
I use Greek Yogurt instead of cream cheese, and have used vinegar to stabilize the egg whites with good results.  Also put a tablespoon of GF baking mix in the first time, and it seemed to help keep volume up during baking,  though youngest dd may have over done the folding process.... we doubled the recipe the second bake.  They still tasted good even though a yellow liquid ran out, and cooked all the buns together.

You can flavor these sweet or savory.  We were happier with regular salt over garlic salt.  I'm not sure if stevia would make them taste funny, or not, but will try soon. 

The chia seeds on top were very good, IMO. 

I'm guessing they'll make outstanding breakfast sandwiches. We're going to try soon with sauteed mushrooms, greens and garlic, topped with a poached egg, and GF hollandaise sauce, yum.  Maybe a sliver of beef.  Maybe not.  I think it would be great either way.
